Warm Asparagus & Potato Salad

Ingredients for 3-4 servings:

  • 300-400g asparagus
  • 1 kg potatoes
  • a large handful of arugula
  • 4-5 small tomatoes
  • 1 ripe avocado
  • a handful of pumpkin seeds (pre-soaked for 2 hours, but ideally 4-6 hours)

Ingredients for the dressing:

  • 1/4 cup olive oil
  • 1 tablespoon tahini
  • juice half a lemon or apple cider vinegar to taste
  • salt to taste
  • water to dilute, if needed

Instructions:

  1. Peel and cut the potatoes, then bake them in the oven with a small amount of coconut oil, salt, and pepper (you can also just boil them).
  2. Boil the asparagus for 2-3 min, after cutting them into pieces.
  3. In a large bowl, mix arugula, chopped tomatoes, avocado, cooked potatoes, asparagus, and activated pumpkin seeds.
  4. Dress the salad with the prepared sauce.
