One of the essential dishes on the festive table in Russia is called “Olivie,” known in the rest of the world as “Russian Salad.”
Over time, “Olivie” has not only retained its relevance but has also adapted to modern times. I’ll share with you a RAW and Plant-Based version of this timeless dish.
For Raw Mayonnaise, you’ll need:
- 1/2 cup cashews (pre-soaked, at least for 2 hours)
- 1 tsp turmeric or mustard (different flavors depending on your choice)
- 1 tsp ground ginger (I add fresh ginger, and fresh turmeric if available)
- Salt to taste
- 2 garlic cloves
- Juice of half a lemon
- Water
Blend all the ingredients, and your RAW mayonnaise is ready.
Important: The sauce should not be too watery.
Salad Base:
- 1 large cucumber
- 3-4 carrots
- 2 medium-sized green apples
- Avocado
- 300-350g frozen green peas (defrosted)
- Dill and green onions
Dice all the ingredients and mix with the mayonnaise.
That’s it. You can serve it now.
