I’m not a fan of long and complicated recipes. I’ve been wanting to try making a vegan walnut pâté, but the recipes I found seemed too complex and required too many steps and cleanup.
So, I decided to create my own version.
Guess what? It turned out fantastic from the very first attempt! Over the past week, I’ve tried two variations: carrot and mushroom, and both were delicious.
To make the pâté, you’ll need 200g of raw walnuts, pre-soaked, preferably overnight. It’s important to soak nuts to remove harmful substances and activate their nutrients, right?
Next, choose your preferred variation:
- For the carrot pâté: 4 medium carrots and two medium-sized onions.
- For mushroom pâté: about 250-300g of mushrooms and two medium-sized onions.
Chop the vegetables and sauté them in coconut oil until fully cooked. Add salt and spices to taste: black pepper, nutmeg, paprika, and cumin.
Transfer the slightly cooled vegetables and well-rinsed nuts to a blender. Add vegetable oil if desired (I add a bit of flaxseed oil) and a splash of water for the right consistency.
Blend it and let the pâté cool. And that’s it!
