Have you also thought about Okroshka?
Okroshka is a traditional Russian cold soup, perfect for hot weather.
But I’ll share an idea for this traditional soup with a raw and vegan twist!
There’s no need to talk about the benefits of raw vegetables, as they are much more nutritious than cooked ones. What else do we need during hot weather when we don’t feel like eating much? We need the maximum nutrients that we can get.
For the base of this cold soup, we will need:
- 1 cup of sunflower seeds soaked for at least 2 hours or, even better, overnight.
- 2 long cucumbers
- A bunch of radishes
- Avocado
- spring onions, dill, parsley
- 1–2 lemons (I add 1.5) or lime; you can also use apple cider vinegar.
- 2–3 cloves of garlic
- Salt (you can use black salt, which gives an egg-like taste similar to the original recipe)
- Pepper
Rinse the soaked sunflower seeds and put them in a blender. Add 2–3 cloves of garlic, a teaspoon of salt, black pepper, and water (my blender’s cup capacity is 750 ml). Blend well until it reaches a kefir-like consistency.
Dice all the ingredients for the base and mix with the dressing. If the dressing is too thick for you, add a little bit of water. Let it sit in the fridge for 2–3 hours, and it’s ready to serve.
